How To Make Vegetable Stock

A good vegetable stock is useful in a huge variety of dishes.Vegetable stock is very easy to prepare and is very ideal to use in all vegetarian fare like noodles,soups,indo chinese dishes like Manchurian, stir fry etc.

Ingredients:
  • 1/2 cup chopped onions
  • 1 tsp chopped garlic
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped cabbage
  • 1//4 cup chopped carrot
  • 1 cup sliced mushroom
  • 3 tsp choped parsley
  • salt and pepper to taste
  • 1 tsp olive oil
Cooking Procedure

Heat oil in pan, saute the onions and garlic for a min, then add the rest of the veggies and saute it for another 1-2 min.Then add parsley,salt and pepper.

In another bowl heat 1 litre water and these above mixture to the water and let it boil until the water becomes half.Then take it off the stove and let if cool.

After it cools stain the water from the vegetable broth and fill it into a ice tray...freeze it and store them in a container.

Note 1: You can add any other vegetables(leek,celery,peas) and other herbs(thyme,basil,cilantro etc) too according to your choice.

Note 2: You can reuse the vegetables which were stained by little modification in different ways
  1. By adding some cheese and spice we can use as a filling for a sandwich
  2. By adding boiled potatoes we can use as a stuffing for paratha
  3. By adding some onions and tomatoes with some sauce we can use for wraps

love your detailed recipe- plus the freezing option would work well for me since having all those veggies together at hand is not possible all the time.
