Easy Cherry Cake

There was a farewell party for one of our family friends who is going back to India,I prepared this cherry cake for them and everybody enjoyed it. I got his recipe from Swathis blog who has a beautifull collection of recipes..The moment I saw this cake I bookmarked it, and it was as delicious as it looked. I am sure you will all enjoy it too.The original recipe is here

Preparation Time: 30 min
Baking Time : 50 min

Ingredients
  • 3 cups cherries
  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour(Atta)
  • 2 eggs
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3 tbsp butter at room temp
  • 1/4 cup canola oil
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp lemon zest
  • 1/8 tsp salt

Cooking Procedure

Cut the cherries into two parts and remove the seeds. Take 20 pieces and keep aside for topping and the remaining again into half.(Each cherry is cut into four quarters)

Preheat the oven at 350 F

Take a large bowl sieve the whole wheat flour,all purpose flour,baking power,baking soda,cinnamon and salt all together.

In another bowl beat the eggs and sugar for 3 min with a hand blender with medium speed till it become fluffy.Then add butter,canola oil,milk,lemon zest and again blend till it all mix nicely.

Take the flour and slowly add to the above egg mixture and stir till it blends properly .This can done with hand blender or even with a spatula.

Now add all the quarter sized cherries to the above mixture and stir softly with spatula.

Take a 9 inch baking pan and pour the above mixture into it and let it settle smoothly.

Then place this tray in the middle rack of the oven and let it bake for 30 min.

After 30 minutes pull out the tray and arrange the cherries on top of it. And let it bake for another 20 min. It should have a light brown color and check with a toothpick if it is not sticking.

You cake is ready to be served after it cools.

Note: The time to bake may vary slightly from oven to oven so make sure it is baked correctly.

I am really floored reading your comment at my post on Kanika...
Actually anyone having any connection with Orissa makes me emotional even if I havent gone there since 1982 or so.
I was born and brought up in Athgarh,and had schooling there . I spent only 1 year in Ravenshaw college before going for engineering in Calcutta..
Really The ganesh puja, saraswati puja bhoji is still lingering in my mind even after many decades.
Try this Kanika ( reduce sugar from 1/3 to 1/6th or even lower) and trust me , it will take you back to your orissa days ...
