Omelette Thalipeeth

I always want to try something different with breads ...when i saw this recipe onKanchan's "Kitchen Gossip" I immediately bookmarked it and prepared this for breakfast this weekend. wow it came out so well and my hubby was praising me that i have one more special recipe with bread, I am sure most of you know about this recipe but still i want to share with you all. Thank you Kanchan for sharing this recipe.

Preparation time: 10 min
Cooking time : 15 min
Makes 4

Ingredients :
  • 5 bread slices
  • 2 eggs
  • 1/3 cup chopped onion
  • 1/3 cup chopped bell pepper
  • 1/4 cup chopped tomato
  • 3 green chopped chillis
  • 2 tbsp chopped cilatro
  • salt to taste
  • 1 tsp oil for each thalipeeth
Cooking procedure:

Take the bread slices and grind it with grinder/food processor and keep aside.

Beat the two eggs in a large bowl n then add the bread powder and all the above ingredients to it except oil n make a semi solid paste.

Heat a pan, spray oil on it ,take a handful of the bread paste, make it a ball and put it lightly on the pan, with your palm spread it slowly into a circle.And spray oil again.

Tip: To make it easy to spread dip ur hand in water and press lightly to spread it.

After 2-3 min flip it and let it cook till both sides are golden brown.

Serve hot with ketchup n sour cream or butter.

Potato Vada / Egg Potato Vada



This is one more recipe i prepared on my hubby birthday , he is big fan of potato vada, he was insisting me to do prepare potato vada for him but because of deep fry i was avoiding his request. So on his birthday i prepared this to make him happy. His friends also had turned up in the evening some of them were non-veg lovers.My hubby recently avoiding eggs in direct form so i made these two types of fritters with the same potato mixture. His friends loved it too and it was new to them. This egg fritters is a street side food in orrisa.I used to enjoy it very much with my friends in my college days. I am sure you will enjoy it too.


Ingredients:
  • 3 hard boiled eggs
  • 2 cups mashed potatos(4 big potatos)
  • 1 cup chopped onion
  • 1 tsp garlic ginger paste
  • 2 tbsp chopped cilantro
  • 1/4 tsp turmeric powder
  • 2 green chilis
  • 1/2 tsp corainder powder
  • 1/4 tsp cummin powder
  • 1/4 tsp garam masala
  • 1/4 tsp chilli powder
  • 1/4 tsp cummin seeds
  • 2 green chillis chopped
  • 1 tsp oil
  • oil for deep fry
  • salt to taste
For Batter:
  • 2 cups gram flour
  • 1/4 tsp baking powder
  • 1/2 tsp chilli powder
  • salt to taste
Cooking Procedure:

Heat oil in pan and add cummin seeds and when it splutter add onions,garlic ginger paste,chopped chillis,turmeric powder and fry till onion become translucent.

Add all the powders and stir for a minute.

Add the mashed potato and mix it till the potato blend with masala nicely

Fry for 2 mins, switch it off and transfer the mixture to plate and mix the chopped cilantro leaves.

Mix all the ingredients of batter with water into a semi-thick paste and keep aside.

After the potato mixture cools, Divide the potato mixture into equal sized portions, the size of a lemon and flatten it 1 inch thick

Heat oil in a deep fry pan.

Dip the balls in the batter and fry it till golden brown.

Serve hot with ketchup.

Egg potato vada recipe


Cut the eggs along the length into two portion

Take some potato mixture in your palm and shape it like a half egg and join with mixture with the half cut egg.

Press nicely and it will look like a complete egg half white half brown

Dip it in the batter and deep fry till golden brown.

Serve Hot

Chunky Egg Masala

Recently for one short trip i made it as a quick food pack .We had sudden plan so i need to prepare some thing very quickly which is easy to carry and should be taste good even if it is not warm. As i have not much vegetables at home so i prepared this dry curry ..believe me it was so tasty when we had with roti. We ate like an egg wrap. You also try and i sure you will enjoy.

Ingredients:
  • 5 boiled eggs
  • 1 cup chopped onion
  • 1 cup chopped tomato
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 2 springs curry leaves
  • 1/2 tsp egg masala powder
  • 2 tbsp oil

Cooking Procedure:

Cut the boiled eggs in big chunks

Heat oil in a pan,add cumin seeds and once it splutters add onion,curry leaves,green chilli fry till onion become golden brown.

Add all the powders and fry for 2 minutes

Then add tomatos and fry till it becomes soft paste

Add the egg chunks to it and stir till the masala blends well with the egg chunks

Serve with rotis and rice
