Delicious Eggless Thumbprint Jam Cookies


I have watching food food channel lately and it is so inspiring to watch Rakesh Sethi cook some wonderful recipes.Its been a long time I baked some cookies and this happens to be one of my favorite. These cookies have a mild crunch and would melt in your mouth.

Ingredients
  • 1/2 cup cooking butter
  • 1/4 cup superfine sugar
  • 1/4 cup maida / all purpose flour
  • 2 tbsp milk
  • 1/2 tsp vanilla essence
  • 1/4 cup of dry fruits mixture
  • 2 tbsp jam of your choice (I used mixed fruit jam)

Procedure
Dry roast the almond, pistachio, cashewnut and make a rough grained powder.

Beat the jam with the spoon until it becomes a smooth consistency and keep aside

Beat the butter and superfine sugar (powered sugar) and mix the vanilla essence and milk to it,then add the all purpose flour and mix nicely with a spatula and then with your hands into a soft lump , cover the dough with a cling wrap and refridgerate for 10 min

Preheat the oven for 180 degrees

After 10 min divide the dough into small lemon size balls. Roll the balls on the dry fruit mixture  then remove and press softly and make a small thumbprint in the center and fill with 1/4 tsp jam and place on a greased metal tray

Bake them for 30 minutes until they begin to turn golden brown .

Enjoy your cookies

Note:

1. Keeping the dough in refridgerator makes the dough more firm to handle

2. Dont refridgerate for too long otherwise the dough will become too hard

3. You can more versatile by a any other jam of your choice, I used kissan mixed fruit jam

Cinnamon Coated Chocochip Cookie

Hi blog buddies hope you all enjoyed your new year, thank you for all your wishes and bearing my absence ... today my niece Rithika asked me why I was not posting any recipes, she is 7 years old and I realized its time I get back to blogging.

I am dedicating this yummy cinnamon coated chocochip cookie to her.I am sure any kid will enjoy it as they got a nice soft texture and a mild crunchy feel with a yummy flavor, try this and I am sure you would enjoy it too.

Preparation time :15 min
Baking time :15 min
Makes :24 cookie

Ingredients:
  • 2 cups all purpose flour
  • 1 cup butter
  • 3/4 superfine sugar
  • 2 tsp orange extract
  • 1/2 cup semisweet chocochip

    For cinnamon coating
  • 2 tbsp superfine sugar
  • 2 tbsp ground cinnamon powder

Baking Procedure

Put the Microwave to convection mode and preheat to 275 F/190 C,line the cookie sheets with parchment paper

Take a bowl and mix butter and sugar nicely, add orange extract then add flour,salt and mix nicely. Then add chocochip and mix till all are blended completely. Keep aside

For coating mix the sugar and cinnamon powder.Keep aside in a plate.

Divide the dough into 24 parts,roll each into a ball,then roll the ball on the cinnamon mixture nicely. And press lightly.

Now lay the cookies on the cookie sheet and bake for 15 min or till golden brown.

Immediately remove from oven and let it cool completely on the cooling rack.

Then store in a air tight container and enjoy your cookies.

Crispy n Chewy Oatmeal Rounds

Yesterday I was craving to eat some sweet , suddenly I got this recipe n thought this is the perfect way to eat boring oats n also satisfy my craving. These cookies have a very crispy edge n become a little chewy when you bite at the center. My hubby went crazy over them ! I've never seen him enjoy cookies so much. I am sure you would too...


Preparation Time:15 min
Baking Time: 10 min for a batch of ten
Makes: 30 cookies

Ingredients
  • 1 and 1/4 cup quick cooking oats
  • 1/3 cup plain flour
  • 10 tsp margarine/or butter
  • 1 cup brown sugar
  • 1/2 cup caster superfine sugar
  • 1 egg lightly beaten
  • 1 tsp vanilla extract
  • 1/2 walnuts finely chopped

Cookie Preparation

Preheat the oven to 350 F.

Melt the margarine in a pan over low heat n keep aside.

Mix oats, brown sugar, caster sugar n flour in a bowl nicely and keep aside.

Add beaten egg and vanilla extract to the margarine,now add this liquid to the flour mixture.Mix with spatula until it blends nicely. Now add the chopped walnuts n mix it.

Grease the baking tray,pour 1/2 tbsp of mixture 2 inches apart,bake for 8-10 min or until the edges turn brown. Let it cool n remove from sheet after 2 min.

Almond Cherry Flower Cookies

I had bookmarked this recipe long back from a food magazine, this cookie is a bit soft , chewy with a slight crisp crust and with the cherry and almond flavor it tastes divine.

Preparation time :15 min + rest on fridge
Baking time :12min
Makes :40 cookies

Ingredients:
  • 1 cup butter softened
  • 3/4 cup superfine sugar
  • 1 egg yolk,lightly beaten(optional)
  • 2 tsp vanilla extract
  • 2 1/2 cup all purpose flour
  • 1/4 cup fresh chopped cherries ( you can also use dry cherries)
  • 1/3 cup finely chopped almonds
  • a pinch of salt

Baking Procedure

Add salt to the flour n mix it nicely .

Put butter n sugar in bowl n mix well then add blend it nicely with egg yolk and vanilla extract .now add the flour one cup at time n mix well .Add the chopped cherries n almonds ,stir until throughly blended with mixture.Make the dough into two parts n shape an each part like a ball ,wrap it with a plastic wraper n refridgerate it for 45 min.

Preheat oven to 375 F,line the cookie sheets with parchment paper

Unwrap the dough and roll out between two parchment paper to about 1/8th inch/4mm .Stamp out cookies with ur choice of shape cookie cutter and put the on the prepared cookie sheets.

Bake for 10 to 15 min untill light golden brown .Let it cool for 5 min n them shift them to a cooling rack to cool completely

Jumbo Pistachio Cookies

This months tried and tasted blog is Aparnas My Diverse Kitchen. I always admire her
and bookmarked many recipes from her blog even before this event.When her blog was selected by Srivalli I was very
excited as now I got chance to try her recipes.

She made white chocolate chip pista
cookie...I used the same measurements with half quantity, in place of white chocochip
I used normal chocochip. Actually I wanted to make std size cookies but after it bake
it became double in size and so I would call it my Jumbo Pistachio Cookies.!! They tasted
awesome and we enjoyed it.The original recipe is here

Preparation Time: 10 min
Baking Time: 20 min
Makes: 15 std cookies or 10 Jumbo cookies

Ingredients
  • 1 cup all purpose flour or maida
  • 3/4 cup sugar
  • 1/3 cup butter
  • 3/4 tsp baking powder
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/3 cup semisweet chocolate chips
  • 1/4 cup chopped pistachios

Baking procedure :

Preheat the oven to 350 F C,

Beat butter and sugar together to a creamy texture ,i used hand blender for 2 min.Add rest of ingredients to it to make a cookie dough .Divide the dough into 15 parts n make balls and them down into a circle shape.

Spray some oil on the cookie sheet then place the cookie dough in baking sheet one inch part.Bake them for 20 min or till light golden brown .. Leave them on the tray for about 2 to 3 minutes before removing from tray.Enjoy ur cookies

Note:The cookies are very soft when they come out of the oven and will break if removed immediately.

Anzac Cookies (Eggless Cookies)


Today i made the first cookie of my life thanks to Parita for sharing such a wonderful recipe which was very easy for me to prepare. It came out very well,every body liked it. You can find the recipe on her blog Parita's World.
