Sizzling Hot Mirchi Bhajji / Chilli Fritter Treat

This is one popular fritter all over India , You can try this Andhra version of mirchi bhajji that will make your guests jump with joy with every bite. The serving of mirchi bhajji with the stuffing of chopped onion with a dash of soda and a little sprinkling of lemon juice creates a wonderfull sizzling effect and tickles your taste buds. The perfect recipe for the monsoon.

Ingredients 

  • 1/2 cup besan / chickpea flour / garbanzo flour
  • 1/3 tsp chilli powder
  • oil for deep fry
  • 8 green bhajji chillies
  • pinch of cooking soda
  • salt to taste

Wash the chilli,pat them dry with kitchen towel.If you feel the chilli are likely to be spicy, slit them and deseed them.If the chilli are big cut them into two.



Mix all the ingredients except the green chillies with water into a semi-thick paste and keep aside

Heat oil in a pan, dip each chilli in the batter and slowly slide it into the oil.

Deep fry in medium flame till you get a nice golden crust .Put them in a plate with a paper towel that will absorb all the extra oil

Slit each chilli and stuff with chopped onion,and sprinkle some cooking soda and salt.Before serving squeeze a little lemon on each mirchi bhajji, when soda reacts with lemon it will give a sizzling effect and serve immediately

Note:
Normally batter will not stick to the chilli so while it is getting fried remove in half cooked state and redip in batter and again deep fry.This will give a nice shape to the chilli bhajji.

Oil should not be too hot while frying as it will become too crusty on the outside and will be uncooked inside.

Fresh Ajwain / Carom Leaves Fritters


Its been raining often in chennai and the weather was perfect to out try this fragnant bajji/fritter. The plant is not sold in markets but can be found in almost all indian home kitchen gardens.

The fritter has a golden translucent green texture that is very mystifying that will make you enjoy every bite. The leaf has a strong fragnance which will get infused with the fritter.

Ingredients
  • 1/2 cup besan / chickpea flour / garbanzo flour
  • 15 ajwain / vammu / omam leaves
  • 1/2 tsp chilli powder
  • 1/2 tsp ginger garlic paste
  • oil for deep fry
  • pinch of cooking soda
  • salt to taste


Procedure

Wash the leaves properly and keep aside
Mix all the ingredients except the leaves to a slow flowy semi thick paste Heat oil in a pan, dip each leaf in the batter and slide the leaf on both side of the edge of bowl to discard the extra batter.

Slowly drop it into the oil and repeat the same for other leaves. Deep fry in medium flame till you get a nice golden crust on both sides. Put them in a plate with a paper towel that will absorb all the extra oil


Note:

If you like your fritters with more batter then you can drop them directly into oil without sliding the leaf on the edge bowl to get thicker fritters.


Oil should properly heated neither too hot or too less before you drop the fritter otherwise they will absorb too much oil.

To test the heat when you drop batter it should sizzle and float immediately without drastic change in color

You can replace awjain with spinach leaves too

Pesara Pindi Bellallu / Green Gram Bubbles


A traditional dish always brings back sweet memories of childhood.And my mom was a expert to dole out so many savory dishes throughout the year.She ensured every season and moment had a special dish.She recently came over and I requested her to prepare this savory green gram bubbles tradionally known as pesara pindi bellallu. The texture and flavor of this savory evening snack can make your family rejoice the moment.The best part is it should be eaten warm with unlimited servings of ghee.!!So enjoy this savory snack my mom has prepared for me and my hubby.

Ingredients
  • 1 cup rice flour
  • 1 cup green gram flour/moong (see the note)
  • pinch of hing
  • 1/2 tsp chilli powder
  • 1/4 cup sesame
  • oil to fry
  • salt to taste
  • ghee for accompaniment

Procedure
Mix all the above ingredients except sesame. Add enough water to it into make a nice soft dough.Divide the dough into equal part of medium size balls.Sprinkle sesame on each ball.On a plastic sheet take each ball and press it firmly to shape it in a round shape. Heat oil in a pan and deep fry it on a medium flame till each side is golden brown. Serve warm with a dash of ghee.
Note: 
1. To make green gram flour grind it into a fine powder and sieve it. 
2.While pressing each ball do not press to much, it should be little thick for it to bubble.

Sweet Corn Delights

Corn is everybodys favourite n mine too, I wanted to try something different instead of routine with corn, I found the corn fritter n a corn halwa recipe from Priya Mitharwals blog which was so tempting n could not resist myself.

Today I got a chance to try them n they came out so well n was very yummy. Thank you Priya for sharing these wonderfull dishes.

Corn Halwa

Ingredients
  • 1.5 cup sweet corn (I used frozen)
  • 1 cup milk
  • 1/2 cup water
  • 1/4 cup sugar
  • 1/4 tsp cardamom powder
  • 2 tbsp ghee (clarified butter)
  • 1 tsp chopped pistachio for garnishing
Make a coarse paste of the corn with blender. Heat the ghee in a pan, add this corn paste n fry in a medium flame for ten min. Stir continously then add milk n water. Let the cook till all the liquid evaporates. Then add sugar n cardamom powder n stir it nicely for 5 min.

Garnish with pistachio n serve warm.

Corn Cottage Cheese Fritter

Ingredients:
  • 1 cup sweet corn ( I used frozen corn)
  • 3/4 cup grated cottage cheese(paneer)
  • 1/2 cup onion
  • 1/2 cup chickpea flour(Basen)
  • 1/4 cup milk
  • 4 chopped green chillies
  • 3 tbsp chopped cilantro
  • 1 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1 tsp chat masala
  • 1/4 tsp turmeric powder
  • salt to taste
  • oil for deep fry
Cooking Procedure

Cook the corn on microwave for 3 min ,then make it a coarse paste in a blender,add all the above ingredients to make a smoothe paste .Heat oil in a frying pan,take 1 tbsp batter make a fine ball out of it n press it lightly into a round shape then fry them till golden brown.

Serve hot with ketchup.

Sprouted Green Gram n Barley Cutlets

I wanted to prepare something for Kirans event but i have limited idea of using barley. I was thinking about it a lot from a long time and tomorrow is the last day,I was seeing recipes posted by blogger friends and they were all using barley so creatively so suddenly it flashed in my mind to make some tasty and healthy snack. There was some sprouts lying in my fridge so I combined these sprouts with barley and made these yummy cutlets and they came out so well....my hubby was not able the guess the filling but he loved it. So friends what are u waiting for ... give it a try. I am sure you will all enjoy it.

Ingredients:
  • 1 cup sprouted green gram (mung)
  • 1/2 cup barley flour
  • 2 tsp rice flour
  • 1/2 cup boiled mashed potato
  • 1/2 cup onion
  • 3 tsp chopped cilantro
  • 1 tsp pav bhaji masala
  • 1/2 tsp coriander powder
  • 1/4 tsp red chilli powder
  • pinch of turmeric powder
  • 3 chopped chillis
  • salt to taste
  • Oil for deep fry
For serving
  • Sliced tomato
  • Sliced onions
  • 1 tsp chat masala
  • Tomoto ketchup
Cooking Procedure

Grind the sprouted green gram (mung) with some little amount of water to a coarse paste and shift to a large bowl.

Add all the above ingredients except oil to this bowl and mix nicely, do not add any water.

Make it into 10 balls and slightly press it to form a round shape like cutlet.

Heat oil in frying pan and deep fry each cutlet till light brown in medium flame.

Then shift the cutlets to plate with a paper towel .

Serve hot with ketchup,sliced tomatoes, sliced onions and with a little sprinkling of chat masala.Enjoy these cutlets with a cup of tea.

Note:If barley flour is not available then u can grind the barley and use it.

Potato Vada / Egg Potato Vada



This is one more recipe i prepared on my hubby birthday , he is big fan of potato vada, he was insisting me to do prepare potato vada for him but because of deep fry i was avoiding his request. So on his birthday i prepared this to make him happy. His friends also had turned up in the evening some of them were non-veg lovers.My hubby recently avoiding eggs in direct form so i made these two types of fritters with the same potato mixture. His friends loved it too and it was new to them. This egg fritters is a street side food in orrisa.I used to enjoy it very much with my friends in my college days. I am sure you will enjoy it too.


Ingredients:
  • 3 hard boiled eggs
  • 2 cups mashed potatos(4 big potatos)
  • 1 cup chopped onion
  • 1 tsp garlic ginger paste
  • 2 tbsp chopped cilantro
  • 1/4 tsp turmeric powder
  • 2 green chilis
  • 1/2 tsp corainder powder
  • 1/4 tsp cummin powder
  • 1/4 tsp garam masala
  • 1/4 tsp chilli powder
  • 1/4 tsp cummin seeds
  • 2 green chillis chopped
  • 1 tsp oil
  • oil for deep fry
  • salt to taste
For Batter:
  • 2 cups gram flour
  • 1/4 tsp baking powder
  • 1/2 tsp chilli powder
  • salt to taste
Cooking Procedure:

Heat oil in pan and add cummin seeds and when it splutter add onions,garlic ginger paste,chopped chillis,turmeric powder and fry till onion become translucent.

Add all the powders and stir for a minute.

Add the mashed potato and mix it till the potato blend with masala nicely

Fry for 2 mins, switch it off and transfer the mixture to plate and mix the chopped cilantro leaves.

Mix all the ingredients of batter with water into a semi-thick paste and keep aside.

After the potato mixture cools, Divide the potato mixture into equal sized portions, the size of a lemon and flatten it 1 inch thick

Heat oil in a deep fry pan.

Dip the balls in the batter and fry it till golden brown.

Serve hot with ketchup.

Egg potato vada recipe


Cut the eggs along the length into two portion

Take some potato mixture in your palm and shape it like a half egg and join with mixture with the half cut egg.

Press nicely and it will look like a complete egg half white half brown

Dip it in the batter and deep fry till golden brown.

Serve Hot

Cottage Cheese Stuffed Tomato Fritter


This is a tomato fritter stuffed with cottage cheese (paneer) and green peas.It may look complicated to prepare but believe me it is very easy to prepare and very tasty too. Hope you all will enjoy it.

Ingredients:

6 fresh medium tomatos
Oil to fry

For Batter:
2 cups gram flour
1/4 tsp baking powder
1/2 tsp chilli powder
salt to taste

For Stuffing:
1 cup grated cottage cheese (paneer)
1 and 1/2 cup coarsely grinded peas
1/2 tsp black pepper
1 green chilli finely chopped
salt to taste



Cooking Procedure:

Mix all the ingredients of batter with water into a semi-thick paste

Take the tomatos and slice the top portion and scoop out the pulp

Mix all the ingredients of stuffing and fill the tomatos, close with the sliced top.

Heat oil in a deep fry pan and once its hot.

Take the stuffed tomatos and dip in batter and slowly place them in oil, do not drop them it as tomato may open up.

Using the spatula put oil of top of tomato ( if oil level happens to be half the height of tomato )

Slowly roll it over and let fry till golden brown.

Take it out of the pan and slowly cut it into half.


Serve it semi-hot with a topping of chopped onions and lemon juice.

Cabbage Potato Onion Fritter ( Pakoda )

I made this fritter recently for a get together, it was experimental to add grated potato and because of its crispy and golden brown texture it gave a unique taste. It was appreciated a lot and thought it would be great to add to my blog. Hope you too will enjoy it.

Ingredients:
  • 1 cup gram flour
  • 2 cups cabbage shredded
  • 1 cup onion sliced
  • 1/2 cup grated potato
  • 2 green chilli chopped
  • 2 tbsp coriander leaves chopped
  • 1 tsp garlic ginger paste
  • 1/4 tsp garam masala
  • 1/4 tsp chilli powder
  • oil to deep fry
  • salt to taste
Cooking Procedure :

Mix all the ingredients mentioned above except oil and make small ball and press lightly

Heat oil in a deep fry pan and drop the above the balls into it

Fry in medium flame till golden brown

Serve hot with sauce
